Roast potatoes in coconut oil

Coconut oil has a high smoking point, which means that you get crispy fluffy roast potatoes every time. There is a rule about roast potatoes – people will always want more and there are never enough. So do more than you think is necessary. And don’t hold back on the fat and salt.

Ingredients

Quantity Ingredient
2kg floury potatoes, peeled and cut into quarters or similar sizes
3 tablespoons coconut oil
50ml olive oil
sea salt

Method

  1. Preheat the oven to 200°C. Parboil the potatoes for 10 minutes in a large saucepan of boiling, salted water. Drain and tip into a roasting tin, shaking the potatoes to ‘chuff’ them.
  2. Add the coconut oil, olive oil and salt to taste. Turn to coat the potatoes, then bake for 45 minutes or until golden and crispy, giving the tin a shake halfway through the cooking time.

Variations:

  • Originally, potatoes were from the New World, specifically the Peruvian Andes. So I’ve come up with some interesting flavour combinations (which can be applied to most roast vegetables) to liven up the Sunday roast or Christmas dinner.

    Tropical: Roast slices of blood orange with the potatoes. Add fresh coconut, cut into 5 mm strips, just before the end as it cooks more quickly. Garnish with coriander pesto or dried chilli flakes.

    Italian: My Italian great-grandmother Nanny Savino taught this recipe to my very British mother. Pour a tin of tomatoes onto the potatoes and mix it in. Add a few cloves of garlic and crumble some oregano onto it.

    Middle Eastern: Add garlic, sumac, harissa, cumin and coriander seeds to the potatoes.

    Saffron: Add a large pinch of saffron strands to the par-boiling water.
