Christophenes, cho-chos or chayotes look a bit like pears and have a subtle flavour, between a melon and a cucumber, with a crisp texture. You’ll find them in ethnic shops and they are one of the more popular Caribbean vegetables, but they are also used in Asian and Mexican cooking.

Ingredients

Quantity Ingredient
2 christophenes, thinly sliced
2-3 tablespoons coconut oil
5 cm piece ginger, peeled and julienned
2 garlic cloves, very finely chopped
1 sprig thyme
3-5 spring onions, chopped into 5 cm lengths
1 not-too-ripe pear, cored and thinly sliced, (optional)
sea salt

Method

  1. Par-boil the christophene slices for 5 minutes in boiling, salted water, then drain. Heat the coconut oil in a heavy-bottomed frying pan and fry the christophene slices with the ginger, garlic and thyme. Add the spring onions with the pear, if using, and season with salt.
