I suggest you buy a chocolate mould for these – available very cheaply at Lakeland – or use a flexible, bendy ice-cube mould. Once the ingredients are melted down, the mixture is liquid and therefore you need to pour it into a mould, then chill it until set.

Do not confuse cocoa and cacao! Cacao is raw, unroasted cocoa beans, which are the dried and fermented beans you find in the cacao fruit, from which all chocolate comes. The rest of the fruit tastes rather like custard apple. Cocoa is the roasted version of the ground-up beans which releases the oils and the ‘butter’.

Ingredients

100g cocoa butter, chopped
3-4 tablespoons cacao powder
1/2 teaspoon finely ground sea salt
4 teaspoons agave nectar or brown rice syrup
or 100g caster sugar

Flavouring options:

lavender sugar
ras el hanout spice mix, (decorate with a rose petal)
nuts, chopped, (hazelnuts, walnuts, pecan nuts, almonds)

glitter or other cake decorations

Method

  1. Put the cocoa butter in a heatproof bowl and set the bowl over a pan of boiling water so that the bottom of the bowl is not touching the water. Melt, then add the cacao powder, salt and agave nectar, syrup or sugar.
  2. If not using flavourings, pour into your clean, dry mould, put straight into the fridge or freezer and leave to cool for a couple of hours. Then pop the chocolates out from the mould.
  3. If using flavourings, decant the melted mixture into bowls and add the flavourings, taking care that the mixture doesn’t start to cool. Then pour into the mould.
  4. If using decorations, either pop them into the bottom of the mould or dab them onto the finished chocolate at the end with a touch of melted chocolate.

Variation:

  • If you add a little nut milk and sweetener, you will end up with a thick chocolate paste that will set less hard. Once cooled, you can roll this into small balls and then roll in cocoa powder to make truffles.
