This works and tastes pretty good. It does also work with soya milk, but I prefer the flavour of rice or nut milk.

Ingredients

Quantity Ingredient
2 tablespoons potato starch
2 tablespoons cornflour
800ml rice or nut milk
100g sugar
2 vanilla pods, split lengthways and seeds scraped out
or 2 teaspoon vanilla paste

Method

  1. Put the potato starch and cornflour into a saucepan and add a little of the milk, stirring to make a paste.
  2. Warm the remaining milk in a heavybottomed saucepan over a low heat, whisking in the sugar and vanilla until the sugar has dissolved. Stir with a wooden spoon for at least 5 minutes or until the custard becomes slightly transparent. It’s important to cook out the starchy flavour of the flour.
  3. Once you can run your finger down the wooden spoon and you can see the wood, take the custard off the heat and serve.
