Watermelon, cucumber, and mint breakfast salad

Light and refreshing, this dish is perfect alone or as an addition to a heartier breakfast.

Ingredients

Quantity Ingredient
1/4 large watermelon
1/2 cucumber
handful green grapes
4 fresh mint leaves, finely chopped
1/2 unwaxed lime, juiced

Method

  1. Slice the watermelon into chunky strips and remove the skin.
  2. Chop the cucumber into thin pieces, leaving the skin on for extra texture. Combine in a bowl with the grapes.
  3. Add the mint to the bowl. Squeeze over the lime juice and serve immediately.
