When the need for a breakfast cookie arises, these chewy little delights will come to the rescue. They are balanced enough to eat for breakfast, yet chocolatey enough to save for your 11am coffee. These cookies are packed with energy-giving nuts, oats, and, ahem, chocolate chips. Almond butter is readily available from health-food shops and large supermarkets, and is a welcome ingredient to any storecupboard.

Ingredients

Quantity Ingredient
3 tablespoons almond butter
2 tablespoons rolled oats
2 tablespoons almond milk
1 tablespoon dark chocolate chips
11/2 tablespoon flaked almonds

Method

  1. Preheat the oven to 200°C.
  2. In a bowl, spoon in the almond butter, rolled oats, and almond milk and mix until combined.
  3. Stir in the chocolate chips and 1 tablespoon flaked almonds until a stiff dough forms.
  4. Use your hands to roll out the dough into balls, then flatten onto a baking sheet.
  5. Bake for 12 minutes, or until just golden. In the meantime, toast the remaining flaked almonds in a dry pan until they have just turned golden. Best eaten warm with a sprinkle of toasted almonds.
