However, they have also been developed with flexibility in mind, so you can freely play around with them to suit your own tastes and needs. Ingredients can be substituted where required (e.g. to suit an allergy or to fit with what’s in your pantry). Use these recipes as guides only and find combinations of ingredients for them that work best for you.

Making the recipes nut-free

Not all recipes in this book can be made nut-free but, where possible, I have included the option to create a nut-free bite or snack. There are a few ways to make recipes nut-free; the simplest is by substituting nutty ingredients with a seed alternative. For example, where almond meal is listed, sunflower meal can be used instead. To make sunflower meal, place raw, activated or toasted sunflower seeds in your food processor or high-speed blender and pulse them until a fine meal forms. Avoid over-processing, or you will end up with sunflower seed butter. Where a nut butter is listed, sunflower or pepita (pumpkin seed) butter can be used.
