Ingredients

Quantity Ingredient
4 large white turnips, stalks trimmed
500ml water
1 teaspoon sugar
40ml chardonnay vinegar
2 garlic cloves
2 sprigs thyme
salt
pepper

Method

  1. Use a vegetable peeler to peel the turnips, keeping as much of the natural round shape as you can. Once peeled, cut the turnips into large chunks.
  2. Put all the remaining ingredients in a large saucepan. Taste and adjust the balance of sweet-sourness to your liking. Add the turnips and bring to a gentle simmer.
  3. Cut a piece of baking paper to the size of the pan and place on top of turnips. Simmer gently for about 15 minutes, until tender.

Variation

  • Caramelised sweet and sour turnips: Prepare the sweet and sour turnips as above then caramelise them in a hot pan in a mixture of oil and butter until they turn a deep golden brown.
