Ingredients

Quantity Ingredient
12 white asparagus spears
1 tablespoon olive oil
100g pea shoots
salt
few drops lemon juice
pepper

Method

  1. Peel the asparagus and cut each spear into 4 pieces on an angle. Heat the olive oil in a frying pan over a moderate heat. Add the sliced asparagus and sauté for about 3 minutes until the spears are just cooked but still firm. Add the pea shoots and sauté for a few seconds just to wilt. Season with salt and pepper, sprinkle on the lemon juice and serve immediately.
