Ingredients

Quantity Ingredient
200g peas
50g butter
salt
pepper

Method

  1. Blanch the peas in boiling salted water for 2 minutes then tip into a colander and drain. Return the peas to the pan with the butter and seasoning. Toss well and cook on a gentle heat for a further 5 minutes.
  2. If you want to prepare the peas ahead of time, blanch and refresh them in iced water, then set aside until ready to finish.
