Lobster tail roasted on aromatics

Lobster responds beautifully to being roasted in its shell, and I find this fragrant spice mix really brings out the sweetness of the meat.

Ingredients

Quantity Ingredient
10ml cooking oil
2 x 600g lobster tails
Aromatic spice mix

Method

  1. Preheat your oven to 180°C. Heat the oil in a heavy-based oven-proof frying pan over a high heat. Add the lobster tails and sauté for a few minutes, turning once or twice, until they turn a deep orangey red.
  2. Scatter on the spice mix and roast in the oven for 12 minutes, until just cooked. Remove from the oven and leave to rest in a warm place for 4 minutes.
  3. Use a lobster cracker or kitchen scissors to cut the tail down the centre of the flat underside. Pull the shell away from the flesh and remove the sweet meat in one whole piece. Slice into large medallions and serve with your choice of accompaniment.
