Ingredients

8 eggs
250g sugar
250g plain flour
125g unsalted butter, melted
140g candied citron, finely chopped

Method

  1. Making the batter

    Separate the egg whites and yolks of five of the eggs. In a bowl, whisk together the five egg yolks and the sugar until pale. Add the flour and the 3 remaining whole eggs. Incorporate the melted butter. Add the candied citron and stir to combine. In a clean dry bowl, whip the reserved egg whites to firm peaks and gently fold them into the mixture using a spatula.
  2. Baking the cake

    Preheat the oven to 165ºC. Lightly grease a 25 cm round cake tin. Pour the batter into the tin and bake for about 40 minutes, or until the blade of a knife comes out clean when inserted into the centre of the cake. Remove from the oven, turn out the cake and allow to cool.
