Ingredients

4 eggs, separated
100g sugar
100g plain flour
icing sugar, for dusting

Method

  1. Making the batter

    In the clean dry bowl of an electric mixer, whisk the egg whites until stiff, gradually adding in the sugar as you go. Using a spatula, gently incorporate the egg yolks, then sift in the flour, being careful to fold it in gently.
  2. Baking

    Preheat the oven to 170°C. Line a baking tray with baking paper. Spoon ‘fingers’ of batter onto the tray, then dust them with icing sugar just before placing them in the oven. Bake for 8–10 minutes. The biscuits are cooked when they are a lovely golden colour. Remove from the oven and allow to cool. Store the sponge fingers in an airtight container away from moisture.
