Ingredients

1 quantity Almond-pistachio nougatine
50g good-quality milk cooking chocolate
200g Praline paste
ground almonds, for decorating
green food colouring, for decorating
white chocolate, for decorating

Method

  1. Making the pods

    Cut the nougatine into about fifty 1 x 3 cm rectangles. Melt the milk chocolate and place it in a mixing bowl with the praline paste. Refrigerate the mixture, stirring it from time to time to achieve a thick paste. When the praline mixture is thick enough, transfer it to a piping bag fitted with a 12 mm nozzle. Pipe a line of praline paste on half of the nougatine rectangles and top with the remaining rectangles. Place in the refrigerator for 1 hour to set.
  2. Decorating the pods

    Combine the ground almonds and a few drops of green food colouring in a bowl.
  3. To temper the white chocolate, place two-thirds of the chocolate in a heatproof bowl over a saucepan of simmering water, making sure the base of the bowl does not touch the water. Once the chocolate reaches its correct melting temperature, take the bowl off the saucepan, add the remaining chocolate and combine with a spatula. The chocolate will melt and lower the temperature of the mixture to the cooling temperature.
  4. Finally, reheat the chocolate to its using temperature. To check the temper of the chocolate, dip the point of a knife into it — the chocolate should set quickly and evenly at room temperature. When working with chocolate, make sure you keep it at using temperature or you run the risk of losing the chocolate’s temper.
  5. Using a fork, dip each nougatine pod in the tempered white chocolate to coat completely, then roll the pods in the ground almonds and tap gently to remove any excess coating. Store the nougatine and praline pods in the refrigerator.
