Batter and filling

Ingredients

275g plain flour
12g baking powder
125g sugar
200g milk
200g honey
75g unsalted butter, softened
200g see method for ingredients

Method

  1. Making the Batter

    Put the flour,baking powder and sugar in a bowl. Put the milk and honey in a saucepan and heat to lukewarm. Pour the milk and honey over the flour, stir well, then add the butter and continue to stir until just combined.
  2. Baking

    Preheat the oven to 170°C. Lightly grease twenty 5 cm cake rings or similar baking moulds. Place the rings on a baking tray lined with baking paper. Pour about 40 g of the batter into each ring, then spoon 10 g of marmalade on top. If the marmalade is too runny, it will need to be reduced before using. Bake the nonettes for 15 minutes, or until cooked through- the marmalade will sink inside during cooking.

50g icing sugar

Method

  1. Icing

    Mix together the water and the icing sugar in a bowl to make a runny paste, then brush the icing over each nonette with a pastry brush. Return the nonettes to the oven for 2 minutes. Allow to cool before removing the rings. Store in an airtight container.
