Ingredients

3 egg yolks
140g sugar
150g unsalted butter, softened
200g plain flour
15g baking powder
4g salt

30 5 cm pastry rings or silicone ‘puck’ moulds

Method

  1. Making the biscuit dough

    In a mixing bowl, whisk together the egg yolks and sugar until pale and thick. Add the butter and whisk to combine, then sift in the flour, baking powder and salt. Bring the mixture together to form a ball, then cover and set aside in the refrigerator overnight.
  2. Baking the biscuits

    Preheat the oven to 170ºC. Lightly grease thirty 5 cm pastry rings and place them on baking trays lined with baking paper. Roll the dough out to 5 mm thick. Use one of the pastry rings to cut out rounds of dough, then place the rounds in the prepared rings. Cook for 15 minutes, or until golden brown.
