Ingredients

250g icing sugar
250g ground almonds
100g plain flour
5 eggs
50g butter, melted
salt
50g flaked almonds

10 8 cm round cake tins or similar moulds

Method

  1. Making the batter

    Combine the icing sugar and ground almonds in a mixing bowl. Sift in the flour, then add 3 of the eggs and a further 2 egg yollks. Add the melted butter and stir to combine. In a separate clean dry bowl, whip the 2 egg whites and the salt. Gently incorporate the egg whites into the almond mixture.
  2. Baking

    Preheat the oven to 170ºC. Lightly grease the tins and scatter the bottom of each with the flaked almonds. Divide the batter between the tins and bake for 15 minutes. Remove from the oven, turn the cakes out of the tins and allow them to cool. Store in an airtight container.
