220g sugar
200g dessiccated coconut

Method

  1. Making the batter

    Place the egg whites and sugar in the bowl of an electric mixer, then heat the bowl over a saucepan of boiling water until it reaches about 45°C on a sugar thermometer. Fit the bowl on the mixer and beat until the mixture is completely cooled. Use a spatula to incorporate the coconut by hand.
  2. Baking the macaroons

    Line baking trays with baking paper. Use a spoon to form macaroons on the trays. Set aside and allow them to dry out for 2 hours at room temperature. Preheat the oven to 230°C. Bake the macaroons in the oven for 4 minutes to lightly colour them.
