125g sugar
25g plain flour
150g flaked almonds

Method

  1. Making the tuile dough

    Combine the eggs and sugar in a mixing bowl using a spatula. Sift in the flour, then gently fold through the flaked almonds, being careful not to break them.
  2. Baking the tuiles

    Preheat the oven to 190°C. On baking trays lined with baking paper, use a spoon to make small mounds of the mixture, making sure you leave enough space for them to spread. Flatten each one with a fork to make rounds. Bake for about 10 minutes, or until the edges of the tuiles have coloured.
  3. Shaping the tuiles

    As soon as the tuiles come out of the oven, remove them from the tray with a spatula. Place them, one by one, on a rolling pin or in a corrugated tuile tray to give them a curved shape. Allow to cool and store away from moisture.

Chef’s tip:

  • To prevent the fork from sticking to the tuile mixture when you flatten them, dip it in hot water first. Add a little finely grated orange zest to the mixture for tuiles with a delectable difference.
