Ingredients

2 egg whites
225g sugar
50g plain flour
125g flaked almonds

Method

  1. Making the croquant dough

    Use a spatula to combine the egg whites and sugar in a mixing bowl, then sift in the flour. Finish by gently folding through the flaked almonds, being careful not to break them.
  2. Baking the croquants

    Preheat the oven to 190ºC. On baking trays lined with baking paper, use a spoon to make small mounds of the mixture, making sure you leave enough space for them to spread. Bake for about 15 minutes. Allow the croquants to cool before removing from the tray. Store in an airtight container.

Chef’s tip:

  • Don’t hesitate to flavour your croquants with orange flower water or, as for the tuiles, with a little citrus zest …
