Ingredients

500g strawberries
450g sugar
3 star anise
1 cinnamon stick
1/2 vanilla bean, split lengthways

Method

  1. Sterilising the bottle

    Sterilise the bottle by immersing it in boiling water for 2 minutes.
  2. Making the syrup

    Wash and hull the strawberries. Place in a blender with the sugar and blend to a purée. Transfer to a bowl, add the star anise and cinnamon stick and scrape in the vanilla seeds. Refrigerate overnight to allow the flavours to infuse.
  3. Bottling the syrup

    Strain the syrup through muslin or a fine sieve into a clean saucepan. Bring the syrup to the boil and cook for 3 minutes, then pour it into the sterilised bottle. To serve, allow one measure of syrup to five measures of water. The syrup can be stored in the refrigerator for up to 1 month.
