Ingredients

100g mint leaves
300g water
400g sugar

muslin or a fine sieve

Method

  1. Sterilising the bottle

    Sterilise the bottle by immersing it in boiling water for 2 minutes.
  2. Making the syrup

    Wash the mint leaves, removing any stems. Place the water, sugar and mint leaves in a saucepan. Bring to the boil, then remove from the heat and refrigerate overnight to allow the flavours to infuse.
  3. Bottling the syrup

    Strain the mixture through muslin or a fine sieve into a saucepan. Bring to the boil for 3 minutes, then remove from the heat and pour the syrup into the sterilised bottle. To serve, allow one measure of syrup to five measures of water. The syrup can be stored in the refrigerator for up to 1 month.
