Ingredients

450g sugar
4 lemons
2 limes
100g water

muslin or a fine sieve

Method

  1. Sterilising the bottle

    Sterilise the bottle by immersing it in boiling water for 2 minutes.
  2. Making the syrup

    Put the sugar into a saucepan and finely grate the zest from the lemons and limes over the top, then squeeze the juice from all of the fruit into the pan. Add the water, bring to the boil, then remove from the heat and allow the syrup to rest overnight.
  3. Bottling the syrup

    Strain the syrup through muslin or a fine sieve into a clean saucepan. Bring the syrup back to the boil for 3 minutes, then pour it into the sterilised bottle. To serve, allow one measure of syrup to five measures of water. The syrup can be stored in the refrigerator for up to 1 month.
