Ingredients

5 oranges
A pinch salt
800g raw sugar, per kilo of fruit
4 cardamom seeds

Method

  1. Sterilising the jars

    Boil the jars and lids for 3 minutes to sterilise them.
  2. Cooking the fruit

    Wash the oranges. Trim the ends of each orange. Fill a saucepan with water, add the salt and bring to the boil. Immerse the oranges in the boiling water for 5 minutes, then remove. Repeat this process twice more in a saucepan of boiling unsalted water. Let the oranges cool before cutting them into small cubes.
  3. Preserving

    Weigh the oranges, then transfer to a large bowl and add 800 g sugar per kilo of fruit. Add the cardamom seeds, cover with plastic wrap and leave to soak overnight. Transfer the marmalade to a saucepan, bring to the boil and boil for 15 minutes. Remove from the heat, then spoon the marmalade into the jars and seal.
