Ingredients

180g hazelnuts
or Praline paste
300g milk
30g honey
275g good-quality milk cooking chocolate
50g dark chocolate, (70% cocoa)

Method

  1. Sterilising the jars

    Boil the jars and lids for 3 minutes to sterilise them.
  2. Preparing the hazelnuts

    Preheat the oven to 160°C. Place the hazelnuts on a baking tray and roast for 10 minutes. Remove from the oven, allow to cool, then rub the nuts between your hands to remove the skins. Transfer the nuts to a food processor and process to make a smooth paste.
  3. Making the spread

    Put the milk and honey in a saucepan and bring to the boil, then pour this mixture over the hazelnut paste. Melt both of the chocolates and incorporate them into the mixture, stirring to combine. Spoon the hazelnut spread into jars and keep in the refrigerator; use within 1 week.
