This rustic confection is a sweet caramel sauce, also known as milk jam, and is delicious spread over a thick slice of bread — perfectly comforting after a long walk in the rain!

Ingredients

1 litre full-cream milk
400g sugar
50g honey
1 vanilla bean, split lengthways

Method

  1. Sterilising the jar

    Boil the jar and the lid for 3 minutes to sterilise them.
  2. Cooking the jam

    Place the milk, sugar and honey in a saucepan. Scrape the vanilla seeds into the pan and add the bean, then bring to the boil and simmer until the mixture gradually evaporates and reduces. When the mixture starts to thicken, remove the vanilla bean and stir constantly so that it doesn’t catch on the base of the pan. Remove from the heat when the jam coats the back of a spoon.
  3. Bottling

    Spoon the jam into the jar and seal immediately. It can be stored for up to 2 months. After opening, keep it in the refrigerator and use within 2 weeks.
