75g glucose syrup
75g water
250g ground almonds

Method

  1. Making the paste

    Put the sugar, glucose and water into a saucepan and heat until it reaches 120ºC on a sugar thermometer — be careful not to overheat. Transfer to a food processor with the ground almonds and process to make a smooth paste.
  2. Finishing

    Turn the almond paste out into a clean bowl and set aside to cool. Use your hands to work the almond paste into a log shape before storing it in an airtight container. The almond paste can be kept in the refrigerator for up to 1 month.
