Ingredients

3 eggs
100g sugar
60g honey
110g pouring cream
45g dark chocolate, (70% cocoa)
100g plain flour
6g baking powder
60g ground almonds
16g unsweetened cocoa powder
60g unsalted butter, melted

Method

  1. Making the batter

    Whisk together the eggs, sugar and honey in a mixing bowl until the mixture starts to become pale and thickens. Heat the cream in a saucepan until it is almost boiling, then reduce the heat, add the chocolate, and stir until the chocolate has melted. Add to the egg and sugar mixture and stir to combine. Sift in the flour and baking powder, then add the ground almonds and cocoa. To finish, incorporate the melted butter — the batter should be smooth and shiny.
  2. Baking

    Preheat the oven to 200ºC. Lightly grease and line two loaf (bar) tins with baking paper. Pour the batter into the tins and bake for 5 minutes. Remove the cakes from the oven and make an incision in the tops using a knife. Reduce the oven temperature to 155ºC and return the cakes to the oven to cook for about 35 minutes, or until the blade of a knife comes out clean when inserted into the centre of the cakes. Remove from the oven, turn out the cakes and allow to cool.

Chef’s tip:

  • It is not essential to use a couverture chocolate for this cake — dark chocolate with a high percentage of cocoa is perfect
