Black beans in chocolate brownies?! Absolutely! And they are incredibly easy to make, too – not to mention tasty and good for you. A ‘no-guilt’ brownie is one dessert recipe everyone wants in their repertoire.

Ingredients

Quantity Ingredient
2 tablespoons chia seeds
6 tablespoons water
2 tablespoons water, if needed
1 x 400g tin black beans, drained and rinsed
90g cacao powder
45g coconut oil, melted
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
100g coconut palm sugar
23 x 30cm baking tin, lightly greased with coconut oil

Method

  1. Soak the chia seeds in the 6 tablespoons water in a small bowl for 10 minutes.
  2. Preheat the oven to 180°C.
  3. Put the black beans, soaked chia seeds, cacao powder, coconut oil, vanilla extract, baking powder and coconut palm sugar in a food processor and blitz together. If the dough appears a bit too thick, add a couple of tablespoons of water and mix again.
  4. Evenly spread the dough into the prepared baking tin and bake in the preheated oven for 20–25 minutes. Remove from the oven and leave to cool before you cut into squares. They are meant to be gooey and melt in your mouth.

Note

  • Black beans are particularly high in folate and iron – especially great for pregnant women.
