Cabbage, carrot and flaxseed coleslaw

There are so many ways to make coleslaw, and often the shop-bought ones are extremely fatty. Making it yourself is a great way to ensure that it stays healthy. Although coleslaw is traditionally served with meat dishes, it’s also great to have with pizza or pasta. Pair this lovely, light slaw with some chicken or lamb kebabs, or with my Kale, Fig and Walnut Risotto.

Ingredients

Quantity Ingredient
1 small savoy cabbage
1 small purple cabbage
large handful mangetout
2 carrots, grated
2 small red onions, thinly sliced
2 tablespoons flaxseeds

For the dressing

Quantity Ingredient
4 tablespoons olive oil
2 garlic cloves, crushed
large handful fresh dill
1 tablespoon dijon mustard
2 tablespoons apple cider vinegar
1 lemon, juiced

Method

  1. Thinly slice both of the cabbages and the mangetout. Put in a large bowl with the grated carrot and red onions and mix well.
  2. Combine all the dressing ingredients in a blender or food processor until smooth. Pour over the coleslaw and mix well. Sprinkle with the flaxseeds.

Note

  • Cabbage contains an abundance of Vitamin C. In fact, it’s richer in this Vitamin than oranges are. Vitamin C is one of the best antioxidants to reduce free radicals in the body.
