Moroccan chickpea, carrot and date salad with paprika dressing

Just like Morocco itself, this salad is incredibly colourful and the flavours really shine through. This is my go-to lunch when I’m feeling really run down, as it incorporates some veg, dark green leaves, protein from the chickpeas and a natural sweetener – dates – all marinated in a delicious spice dressing.

Ingredients

Quantity Ingredient
1 x 400g tin chickpeas, drained and rinsed
1 small red onion, chopped
2 small carrots, grated
2 large handfuls of spinach
6 dates, pitted and chopped

For the paprika dressing

Quantity Ingredient
2 tablespoons olive oil
1 tablespoon tamari
1 teaspoon ground cumin
1 teaspoon paprika
1 lemon, juiced

Method

  1. Put the chickpeas, onion, carrots, spinach and dates in a large bowl and toss everything together.
  2. Whisk all the dressing ingredients together in a small bowl.
  3. Drizzle the dressing over the chickpea salad and leave to marinate for at least 1 hour.

Note

  • Pour the dressing over the salad in the morning before work, and by lunchtime the salad will be perfectly marinated.

Note

  • Grinding dried red peppers into a fine powder makes paprika. just 1 tablespoon provides an ample amount of carotenoids (thus its rich red colour), the family that includes vitamin a, which is great for our eyesight.
