Marinated tofu with an almond-butter sauce, wrapped in wholewheat tortillas

I’ve created this recipe with tofu, but you can easily swap the tofu for prawns and still use the same sweet and spicy marinade.

Ingredients

Quantity Ingredient
450g firm tofu
2 wholewheat wholewheat tortillas
1 carrot, grated
1/4 cucumber, grated
2 leaves of romaine lettuce, shredded
1/2 red onion, thinly sliced
handful fresh coriander, chopped
sesame seeds, for sprinkling

For the marinade

Quantity Ingredient
4 tablespoons olive oil
2 garlic cloves, crushed
2 tablespoons tamari
1 tablespoon maple syrup
1 teaspoon dried chilli flakes

For the almond-butter sauce

Quantity Ingredient
2 tablespoons almond butter
1/2 tablespoon raw honey
1/2 tablespoon tamari
1 tablespoon olive oil

Method

  1. Pat the tofu dry with some kitchen roll. Line a plate with some kitchen roll and place the tofu on top. Place another small plate on top of the tofu and weight it down with something heavy (a tin of beans always works for me). Leave for about 15 minutes for the excess water to seep out of the tofu.
  2. Meanwhile, whisk all the marinade ingredients together in a small bowl.
  3. Slice the pressed tofu into strips, toss the strips in the marinade until coated, then transfer to the fridge to marinate for at least 30 minutes. Mix the almond butter sauce ingredients together in a small bowl.
  4. Once marinated, divide the tofu strips between the tortillas, placing them in the centre and drizzle with some of the sauce. Top with the carrots, cucumber, romaine lettuce, red onion and coriander. Drizzle a bit more of the sauce over and sprinkle with sesame seeds. Roll up each tortilla into a wrap, wrap tightly in foil or clingfilm, pop in a container and you are good to go!

Note

  • Wholewheat tortillas are nutritionally superior to the more common white-flour variety, as products made from white flour have been stripped of pretty much all their essential nutrients.
