Lemon sweet potato salad with edamame and sunflower seeds

Sweet potatoes have become a real staple in our house and definitely trump the white ones. From sweet potato chips to soups and even in puddings, the sweet potato is a superstar when it comes to creating interesting and tasty recipes. Everyone loves a potato salad, but this one could knock socks off at your next picnic. And why wait for a picnic to enjoy a potato salad? A hearty and healthy lunch is what you will get with this recipe!

Ingredients

Quantity Ingredient
250g sweet potatoes
125g shelled edamame
45g sunflower seeds
small handful fresh mint, chopped

For the lemon dressing

Quantity Ingredient
2 tablespoons olive oil
1 tablespoon lemon juice
1/2 lemon, zested
small garlic clove, crushed
1 tablespoon maple syrup

Method

  1. Cut the sweet potato into chunks (keep the skins on, they’re good for you!) Bring a saucepan of water to the boil and add the potatoes. Cook for 15–20 minutes, or until tender, then drain and set aside to cool.
  2. Meanwhile, bring a pan of water to the boil, add the edamame and cook for 5 minutes. Drain and rinse.
  3. Once the sweet potatoes are cool, put them in a large bowl and add the edamame, sunflower seeds and chopped mint.
  4. Mix all the dressing ingredients together in a bowl, then drizzle over the sweet potato salad and serve.

Note

  • Try to always keep the skins on sweet potatoes as that’s where much of their goodness is found, such as Vitamin C, Vitamin A and Calcium.
