Spicy tofu curry with coconut and cardamom

Although this recipe was originally intended to have prawns in it, I’ve used tofu instead, but you can, of course, add whichever you would prefer – they’re both extremely satisfying.

Ingredients

Quantity Ingredient
3 tablespoons coconut oil
2 onions, finely chopped
3cm piece of fresh ginger, grated
1 teaspoon ground cumin
1/4 teaspoon ground cardamom
2 teaspoons ground coriander
2 teaspoons ground turmeric
2 teaspoons chilli powder
450g firm tofu, cut into small chunks
100g coconut cream
475ml boiling water
lime juice, to taste
sea salt
freshly ground black pepper
brown rice or soba noodles, to serve

Method

  1. Melt the coconut oil in a large frying pan over a medium heat. Add the onion and ginger and fry for 2–3 minutes. While continuing to fry, add the cumin, cardamom, coriander, turmeric and chilli powder. Stir the contents of the pan well, then add the tofu. Reduce the heat to low and leave to cook gently while you create the coconut milk.
  2. Mix the block of coconut cream with the 475ml boiling water in a jug. Stir well, then pour this into the frying pan. Turn the heat back up to a medium and allow everything to cook together for 5–10 minutes. Squeeze over the lime juice and season to taste.
  3. Serve over brown rice or soba noodles – both are equally delicious

  • This is the kind of meal you need when you’re poorly and your body craves strong flavours accompanied by sustaining rice or noodles.

Note

  • Cardamom is fantast ic for indigest ion and heartburn relief. You can even chew a few seeds to help as well!
