Creamy breakfast Bowl with basil and blueberries

Don’t worry; this one does not taste like a salad! It has some super greens hidden in it, along with avocado to give it that creamy texture. The blueberries create a lovely colour and help to mask the ‘green’, which is especially clever if you want to get your kids to eat this. And trust me, they will dive right in just like all my kids do as they simply love it.

Ingredients

Quantity Ingredient
handful chopped, fresh coconut
1/2 banana
1/2 avocado, peeled, pitted and chopped
1/4 cucumber
handful blueberries, plus extra to serve
2 dates, pitted
8 fresh basil leaves
1 lime, Juiced
2.5cm piece of fresh ginger
desiccated coconut, to serve

Optional toppings

Quantity Ingredient
bee pollen
chia seeds
goji berries

Method

  1. Toss all the ingredients in a blender or food processor and whizz away.
  2. Serve in a bowl, top with more blueberries and a sprinkle of desiccated coconut. For a real superfood boost, add the other optional toppings.

Note

  • Basil comes from the same family as mint and is touted as one of the healthiest herbs due to its impressive vitamin K count, which is essential for blood clotting.

Note

  • If you put all the ingredients in the blender or food processor the night before, when you wake up, you just have to switch it on and voilà... breakfast is served!
