Chocolate for breakfast? Well, of course! It’s allowed because in this recipe we are using the real deal, cacao. And cacao is jam-packed with antioxidants and a whole bunch of other good stuff for your body and mind. My youngest child, Nestor, is a chocoholic so when this very special breakfast pudding is on offer, he says I’m the best mummy in the whole wide world. Maybe I should make it more often!

Ingredients

Quantity Ingredient
360ml unsweetened almond milk
5 dates, pitted
1/2 teaspoon cacao powder
1/2 teaspoon ground cinnamon
pinch ground cloves
pinch ground nutmeg
pinch ground ginger
40g chia seeds

Method

  1. Combine the almond milk, dates, cacao powder, cinnamon, cloves, nutmeg and ginger in a blender or food processor and blitz until smooth. Pour this into a mixing bowl and stir in the chia seeds.
  2. Divide the mixture into 4 small bowls or Mason jars and place in the fridge for a few hours or overnight. This will allow the chia seeds to swell up to 10 times their size and make a delicious, jelly-like breakfast.

  • Just a 28g serving of chia seeds contains 18 percent of the recommended daily allowance of calcium.
