Wafers are a great accompaniment to any flavoured ice cream. We love to serve our wafers with the ice cream blocks, to make a delicious ice cream-type sandwich!

Ingredients

Quantity Ingredient
150g icing sugar
175g plain flour
1 teaspoon cornflour
175ml egg whites
100g butter, melted

Method

  1. Preheat the oven to 170°C.
  2. Sieve together the icing sugar, plain flour and cornflour into the food processor, add the egg whites and blend. Once blended together, dribble the melted butter down the inside of the bowl, then process again.
  3. The mixture should be the consistency of a thick honey, as it needs to be spread evenly and thinly. If it is too thick, add a little extra melted butter.
  4. Put 150 g of the mixture on to a baking tray covered with a silicone mat approximately 30 x 30 cm and spread very thinly with the back of a palette knife, until it is the thickness of paper
  5. Bake in the preheated oven for 5 minutes. Remove from the oven and turn up the heat to 190°C.
  6. Cut the mixture with biscuit cutters to the shapes required and place on a baking rack, so that the air can fully circulate, then return to the oven and bake for a further 5 minutes. Remove from the oven and leave to cool. Keep in an airtight box once cold.
