Combine with the ice cream of your choice for that delicious sticky toffee flavour.

Ingredients

Quantity Ingredient
475g caster sugar
250g butter
60ml golden syrup

Method

  1. Combine all the ingredients in a large saucepan with 60 ml water and bring to the boil, stirring until everything is well mixed and the sugar has dissolved.
  2. Stop stirring and continue to boil until the temperature reaches 140°C and the mixture is dark golden in colour.
  3. Pour into a small, metal tray approximately 20 x 30 cm and leave until set. Do not pour on to waxed paper and leave, as it’s impossible to remove the wax paper.
  4. Cut into 1 cm squares and scatter through ice cream once churned.
