Seville oranges are bitter oranges, grown throughout the Mediterranean. They are highly aromatic, with a noticeably thick and dimpled skin but are not suitable for eating on their own. They are in season for a very short time in the UK from the end of December to February. Make the most of them by making your own marmalade.

Ingredients

Quantity Ingredient
700g seville oranges
90ml lemon juice
1.4kg granulated sugar

Method

  1. Place a saucer in the freezer.
  2. Put the oranges in a large pan with 1.2 litres water, bring to the boil and simmer for about 2 hours.
  3. Allow to cool so that the oranges are easy to handle, then remove the oranges leaving the water in the pan.
  4. Cut up the oranges, including the pulp, into peel (the thickness will depend on your personal preference).
  5. Remove the pips and transfer to a small pan with a small amount of water to cover. Boil for 5 minutes, then strain the pips out.
  6. Put the chopped oranges, strained liquid and lemon juice in the pan of cooking water. Add the sugar and stir over a low heat until dissolved. Bring to the boil and cook until set.
  7. Test for setting by placing a teaspoon of marmalade on the chilled saucer. Return it to the freezer for a minute, then push the marmalade with your finger. If a skin forms, the marmalade is set. If not, continue cooking for a few more minutes and keep testing.
  8. Take off the heat then remove any scum with a slotted spoon. Stir to ensure even distribution of peel and pot into warmed clean jam jars. Leave to cool before the lids are fixed.

Variations

  • To make chilli marmalade, add 1 small chilli chopped, to every litre of marmalade.

    To make ginger marmalade, add a piece of fresh root ginger, 2.5 x 5cm, peeled and roughly chopped into four pieces. Add 1 teaspoon of stem ginger, chopped, to every 750 ml marmalade.
