These are a real favourite at Ruby Violet’s and are really easy to make. Once again, they can be made using any flavoured ice cream of your choice. I suggest adding a rippled flavour to your ice cream, for extra taste and elegance. Try eating them with wafers, or you can buy ready made ones. They can be coated in chocolate and dipped in nuts – again, the possibilities are endless!

Method

  1. These blocks are made by layering ice cream into a silicone mould and then running a ripple through it.
  2. You can find silicone mould on the Internet; ours are Italian, and just the right shape and size measuring at 10 x 6 cm to create a small block of ice cream. Slide between 2 wafers for an added texture and crunch!
