We were asked to make this flavour for someone's ice cream birthday cake and they absolutely adored it, so we decided to sell this flavour combination in the shop for all our customers to enjoy. We do many variations depending on how we are feeling. Add chocolate and hazelnut toffee crunch, for extra texture. You can also mix it with layers of chocolate or vanilla ice cream.

Ingredients

Quantity Ingredient
800ml Basic sweetened ice cream mix
40ml kahlua or similar coffee-flavoured liqueur
30ml dark rum

To serve

Quantity Ingredient
2-3 tablespoons Mocha ripple

Method

  1. Make one quantity of the basic sweetened mix. Leave to cool.
  2. Whisk together the coffee-flavoured liqueur and rum then add to the cooled base mix. Place in an ice-cream maker and churn.
  3. Remove the ice cream from the machine and layer it into a container, gently rippling it through with the mocha ripple.
  4. Scoop the churned ice cream into a container and keep in the freezer until ready to serve.
