These make great decorations for ice cream balls. I like to use them to decorate my Christmas cake and ball. For the cut-out ice cream shapes use a plain ice cream such as chocolate or vanilla. Anything with a ripple will melt too quickly.

Method

  1. Once you have churned your ice cream, take a baking tray 20 x 30 x 5 cm, line it with a silicone mat and spread an layer of ice cream over, approximately 1.5 cm deep.
  2. Freeze for 1–2 hours then, using pastry cutters, cut out the shapes required. Place these on on a silicone mat and return to the freezer until ready to use.
  3. You can experiment with all sorts of cutter shapes, from hearts to flowers – have fun with them, and add that elegant touch to your chosen dessert.
