These make a stunning decorative addition to your ice cream and are easy to make, once you know how. I made the mistake of immersing the whole petal in egg white when I first tried to make these, and ended up with a heavy, soggy mess. The trick is to be deft and delicate with a light touch. They make great decorations for Valentine's day, weddings and birthdays. They truly are a way to impress all your friends and family.

Ingredients

Quantity Ingredient
1 egg white
1 tablespoon caster sugar
1 rose head, freshly picked

Method

  1. Break the egg in a bowl and separate it. You will only need the whites. Whisk until light and frothy.
  2. With a small, clean paintbrush, lightly coat each rose petal with the frothy part of the egg white, then sprinkle the sugar over and voila! You have sugared rose petals – very beautiful.
