Roasted garlic with sourdough

Ingredients

Quantity Ingredient
30 garlic cloves
4 tablespoons olive oil
250g stale sourdough bread
250ml warm water
1 teaspoon sea salt

Method

  1. Preheat the oven to 150°C. Toss the whole, unpeeled garlic cloves in a large roasting tin with the oil so that they are all coated. Roast for 1 hour, giving the tray a shake halfway through, until the garlic is completely soft. Remove the tray from the oven and allow the garlic to cool slightly until safe to handle.
  2. In a large bowl, soak the bread in the water for 5 minutes. Meanwhile, squeeze the garlic out of its skins and into a large pestle and mortar. Remove the bread from the water, squeeze it out, then tear it into the pestle and mortar with the garlic and salt. Pound the mixture until well combined and then devour. It will not hang around for too long!
