Ingredients

Quantity Ingredient
1 teaspoon olive oil, for greasing
50g cocoa powder
125ml boiling water
2 teaspoons vanilla extract
170g ground almonds
1/2 teaspoon bicarbonate of soda
pinch salt
225g caster sugar
170ml light olive oil
3 large eggs
greek yoghurt, to serve (optional)
or a shot espresso, to serve (optional)

Method

  1. Preheat the oven to 180°C, and oil and line a 23 cm round springform cake tin with baking parchment.
  2. Whisk the cocoa powder into the boiling water in a bowl until you have a smooth paste, then whisk in the vanilla extract.
  3. In a separate bowl, mix the ground almonds with the bicarbonate of soda and salt.
  4. Place the sugar, olive oil and eggs into the bowl of a food processor and beat with the flat beater until the mixture is light in colour and has a creamy texture.
  5. Turn the speed of the processor to low and add the almond mixture and then the cocoa paste. Beat slowly until everything is well combined.
  6. Pour the batter into the tin and bake for 45 minutes or until a skewer inserted into the centre of the cake comes out clean. Transfer to a wire rack to cool, then serve with greek yoghurt or a shot of excellent espresso.
