Tortilla on a sourdough flute

People speak about a national divide in Spain when it comes to tortilla: to onion or not to onion? We fall into the onion camp. With that established, we keep this tortilla as simple as possible, letting the caramelised onions speak for themselves. Ideally, use a small frying pan suitable for a single serving, and serve with Isle of Wight tomato ketchup.

Ingredients

1 large potato, peeled and thinly sliced
2 tablespoons olive oil
1 small white onion, thinly sliced
2 eggs, lightly beaten
sea salt
small sourdough flute, to serve
butter, to serve
good-quality tomato ketchup, to serve

Method

  1. Bring a saucepan of lightly salted water to the boil and cook the potato for 8 minutes. Drain the potato well and allow to steam for a couple of minutes (which helps reduce the water content), then set aside.
  2. Add the oil to a small frying pan and heat gently. Add the onion and cook over a low heat for about 10 minutes until the onion starts to soften and then lightly brown. Add the potato and gently fold into the onion.
  3. Pour in the eggs and with a fork spread the potato and onion in the pan evenly. Leave to cook over a medium heat for 5 minutes. Use a spatula to gently loosen the tortilla from the pan. Put a plate face down over the pan and, holding the plate firmly in place, quickly but carefully (don’t touch any hot part of the pan) flip the plate and pan over so that the tortilla is now on the plate. Return the tortilla to the pan with the cooked side face up by sliding it from the plate back into the pan. Place the pan back on the heat and cook for a further 4 minutes. Once cooked, transfer the tortilla to another plate.
  4. To serve, split the sourdough flute in half lengthways and butter it. Slice the tortilla in half and lay the pieces on the bottom half of the sourdough. Sprinkle with a good pinch of salt, top with the other half of the sourdough and serve with a dollop of tomato ketchup.
