Hummus means ‘chickpea’ in Arabic, and mixed with sesame paste (or tahini), lemon juice, salt and garlic, this humble pulse becomes everyone’s favourite healthy dip. Serve with a drizzle of olive oil and sourdough toast.

Ingredients

Quantity Ingredient
1 x 250g tin chickpeas
60ml lemon juice
3 garlic cloves, crushed
1 teaspoon Harissa
1 teaspoon chopped mint leaves
1/2 teaspoon ground cumin
1 teaspoon salt
150ml tahini paste
4 tablespoons light olive oil, plus extra to serve
sea salt
freshly ground black pepper
sprinkle of paprika, to serve
sourdough toast, to serve

Method

  1. Drain the chickpeas in a colander and rinse them in cold water.
  2. Place the chickpeas along with the remaining ingredients in a food processor and blitz until you have a smooth, creamy paste. Season to taste and add a sprinkle of paprika. Serve with sourdough toast and a glug of olive oil.
