Ingredients

Quantity Ingredient
small bunch asparagus, (British in-season asparagus is best)
1 tablespoon olive oil
2 tablespoons balsamic vinegar
4 thin slices prosciutto di parma
pinch sea salt

Method

  1. Heat a griddle pan over a high heat. In a small bowl, toss the asparagus in the oil and lay the spears on to the pan. Fry for 6 minutes, giving the pan a shake from time to time to cook the asparagus evenly. Add in the balsamic and cook for a further 3 minutes.
  2. Transfer the asparagus from the pan to a plate and sprinkle with the salt. Serve with the prosciutto and a couple of sliced and salted heritage tomatoes if you like.
