Yabby tails with saffron sauce, braised chicory and fregola

Although saffron is a perfect partner for most seafood, it is especially good with yabbies and cod; the earthy flavour of saffron works in perfect harmony with the fish’s earthy river taste. You can replace the yabbies with prawns (shrimp) or other seafood, but freshwater fish works better.

Ingredients

Quantity Ingredient
10 chicory stems, cut into 5 cm batons
24 yabby tails, cooked
150g fregola or israeli couscous, cooked
salt
lemon juice, to taste
2 tomatoes, peeled, seeded and diced
2 spring onions, finely chopped, green part only

Saffron sauce

Quantity Ingredient
300ml white wine
2 tbsp white wine vinegar
1 lemon, juiced
saffron threads
300ml Chicken stock
150g unsalted butter, cut into cubes

Method

  1. To make the saffron sauce, combine the wine, vinegar, lemon juice and saffron in a saucepan over high heat. Boil over high heat until the liquid has reduced by half. Add the stock and bring back to the boil, then reduce by half again. Pour into a suitable bowl or jug, then, using a hand-held stick blender or whisk, blend in the butter one piece at a time until well combined. Keep warm.
  2. Bring a saucepan of salted water to the boil and blanch the chicory for about 2 minutes, or until just tender. Drain well.
  3. Add the yabby tails, fregola and chicory to the saffron sauce and stir over low heat to combine and heat through. Season with salt and lemon juice and serve in large bowls. Garnish with the tomato and spring onion.
