Ingredients

Quantity Ingredient
2 large onions, finely sliced
80g salt
200ml white vinegar
80g caster sugar
500g Mayonnaise

Method

  1. Place the onion in a bowl and add the salt. Mix to coat evenly, cover with plastic wrap, and leave to marinate for at least 1 hour in the refrigerator. After 1 hour, the onion should be wilted. Wash under cold water to remove the salt.
  2. Place the vinegar and sugar in a saucepan over low heat, stirring until the sugar has dissolved. Pour the hot syrup over the onion and allow to cool. The onion can be stored indefinitely, so a large batch can be made and stored in containers or jars.
  3. Strain the pickling liquid from the onion and reserve for the mayonnaise.
  4. Make the Mayonnaise following the instructions in the recipe on the left, replacing the vinegar with 3 tablespoons of the pickling liquid. When all the oil is incorporated, add the onion and mix together to combine. Taste for seasoning, adjusting with salt pepper and some extra pickling liquid, if needed.
